1 thin baguette, about 16 inches long (my grocery store carries a multi-grain variety you take home and bake that we like to use)
olive oil
1 pound tomatoes, sliced
salt and pepper, to taste
1/2 cup mozzarella cheese
1/2 cup fresh basil leaves
- Cut baguette on the diagonal into 1-inch slices.
- Brush both sides of each slice of bread with olive oil.
- Place on an ungreased baking sheet and broil until very lightly toasted, about 5 minutes.
- Top with tomato slices, salt and pepper, and cheese.
- Return to the oven and broil until cheese is melted.
- Top with basil leaves.
- Serve immediately.
