3/4 cup sugar
1 large egg
1 1/2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 cup vegetable oil
3/4 cup milk
1 tsp vanilla extract
2 tbsp butter, melted
1/2 cup sugar for rolling
- Preheat oven to 350. Grease a muffin tin.
- Beat together sugar and eggs until light in color.
- Add flour, baking powder, salt and nutmeg. Stir to combine. Pour in vegetable oil, milk and vanilla. Mix.
- Divide batter into 12 muffin cups. Bake 15-18 minutes or until toothpick inserted in center comes out clean.
- When muffins come out of the oven, melt butter and pour remaining sugar into a small bowl. Dip the top of each muffin in the melted butter and then dip in sugar. Cool on a wire rack.
